3. SALIENT CHARACTERISTICS
3.1 Material. The flatware shall be fabricated from stainless steel in
accordance with types 301, 302, or 304 of ASTM A 167, or type 430 of ASTM A
176. As an alternative, the knife may be fabricated from stainless steel in
accordance with types 410 or 420, Condition A, of ASTM A 276.
3.2 Design and construction. Type 1 flatware shall be graded
construction and type 2 flatware shall be ungraded construction. The flatware
shall be of single piece construction of the stainless steel specified in 3.1
and shall conform to the requirements specified herein.
3.2.1 Type 1, item I, style 2 knife. The knife shall be shaped as shown
on figure 1, and shall conform to dimensions shown in table I. All edges except
the cutting edge shall be rounded and smooth. The cutting edge of the knife
shall be uniformly, continuously, and distinctly serrated in accordance with
the manufacturer’s standard practice provided the serrations (flutes) fully
extend a minimum of 1-3/4 inches (4.4 cm) from the blade tip. The top edge of
the blade shall taper uniformly from the blade tip to a point not more than 3.4
inch (1.9 cm) from the handle. Blades shall have an average Rockwell hardness
between C38 and C53 (see 4.7.2.1). Knife blades shall show no trace of copper
when tested using a copper sulfate solution 9see 4.7.1).
